Bread 101


A couple of weeks ago I decided in earnest to start making all my family's bread. I dry packed wheat at the cannery, bought a wheat grinder, and sent out an sos to my ward listserve for wheat bread recipes. I decided to try this recipe from Rebecca first because, unlike many recipes, it makes just one loaf of bread (my stand mixer is in storage so I'm kneading by hand, baby) and also because she gave me a big warm jam slathered slice of it to taste when I was at her home and I knew it was yummy! Aside from my mom-in-law's amazing and super easy french bread recipe, this is my first homemade loaf of bread and it was surprisingly gratifying to make. You can see that I took the loaf out of the oven a smidge too early, but it was still soooo good. My boys gobbled it up as our fhe treat. Please, please, no, really, no need for applause...

Rebecca's Honey Oat Bread
1 pkg yeast
1 & 1/4 cups warm water
1/2 cup honey
(*I used 1/4 cup honey and 2 T molasses, next time I'll decrease the honey even more)
2 T canola oil
1 & 1/2 tsp salt
1 cup quick oats
1 & 1/2 cups whole wheat flour
1 & 1/2 cups white flour, divided

Dissolve yeast in water, let stand 5 minutes or until bubbly. (I used a hand mixer for this next step) Combine yeast mixture with honey (and molasses), oil, salt, oats, and whole wheat flour. Stir in 1 cup of the white flour. Use a bit of the remaining white flour to lightly cover kneading surface. Turn out dough onto floured surface and knead, using remaining flour as needed, for 8-10 minutes until smooth (but still slightly tacky) and elastic and until dough starts to spring back when you push your fingers into it. Put into a large greased bowl and cover with a clean towel. Allow dough to double in size. Punch down and shape into loaf and place in greased 9x5 loaf pan. Cover and rise again. Bake at 350 for 45 - 50 minutes.

Who is the real domestic goddess? I would say you!!! The bread looks wonderful. I started making bread a while back but just could not get into only eating bread I made. I did not have a mixer and kneaded all of it by hand. Maybe that is why I could not get into it!

Yours looks great - keep it up! Oh - I have a great refrigerator jam recipe if you want it - easy and delicious!
